Serves 2 people
2 cooked Crayfish (each approximately 500g or 1 x 1kg)
75g Clarified Butter
1 level Tablespoon of finely chopped Parsley
1 level Teaspoon of Lemon Juice
A shake of Pepper
Put butter into the saucepan. Cook very slowly until it turns light brown.
Stir in the remaining ingredients and pour over the crayfish.
Chef’s Comments: Have your crayfish hot and ready to serve.
